A small bakery on N Hanover Street in Carlisle, baking irresistible round food since 2011.

The short version

Pablo opened the shop in 2011 with four sweet pies and a stubborn belief that everyone deserved a homemade pie now and then. The menu grew because customers asked it to. The catering arm started by accident in 2018 — a "twelve pies for Thursday" order that turned into a real business line by 2019.

Fourteen years in, we're still in the same brick storefront, still rolling crusts by hand, still talking too long with whoever walks in.

The people

If you've emailed us, called us, or had a pie delivered, you've probably interacted with one of these folks:

  • Pablo Pies — owner. The one rolling crusts at 4am.
  • Paul Proteus — catering manager. Quotes, headcount math, the corporate accounts.
  • Clarisse McClellan — head baker. Knows every ingredient that walks in the door.
  • Mildred "Millie" Montag — host and head of house. The voice on the phone.
  • Elliot Rosewater — catering driver. Will drive a replacement out to your office personally.

Behind them, a rotating cast of part-timers, weekend bakers, and college kids from Dickinson who keep the place running.

What we believe

Comfort food is a public good. We make crowd-favorites and we do them well. We're not chasing trends — we're chasing the version of an apple pie that makes you call your mom.

Local first. Pennsylvania apples when we can get them. Strawberries from Snavely's farm down the road. Cream from a creamery in Lancaster.

Slow is fine. Some of our pies take a full day to make. That's the price of getting it right, and it's a price worth paying.
